Shakarkand ki Tikki
Time to cook: 15 min
Serves: 4
Best served with tamarind chutney
Ingredients:
Sweet Potato 4-5 (mashed)
Singhare ka Atta 3-4 tablespoons
Chaat Masala -1 teaspoon
Amchoor powder -1 teaspoon
Cumin powder – 1 teaspoon
red chilli powder -1 teaspoon
fennel seed powder -1/2 teaspoon
Roasted Peanuts -2 tablespoons (crushed)
Coriander leaves – 2-3 tablespoons
Green chilli -1 (chopped)
Lemon Juice – 2 teaspoons
Ghee 2-3 tablespoons
Rock salt to taste
Method:
Step 1 – Put mashed sweet potatoes in a bowl, add rock salt, green chilli, coriander leaves, roasted peanuts and mix well
Step 2 – Shape the mixture into tikkis of equal size
Step 3 – Heat some ghee in a non- stick tawa. Now shallow fry the tikkis until they turn crispy and golden.
Serve the Shakarkand tikkis with tamarind chutney.
Vrat ki Kadhi
Time to cook: 15 min
Serves: 4
Ingredients:
Dahi/Yoghurt 1 1/2 cups
Chestnut flour 2 tablespoon
Salt to taste
Rock salt 1/2 teaspoon
Red Chilli powder 1 teaspoon
Cinnamon 1/4 teaspoon
Ghee 2 tablespoon
Cumin seeds 1 teaspoon
Curry leaves 7-8
Coriander leaves
Method:
Step 1 – Put yoghurt in a big bowl and add chestnut flour, rock salt, red chilli powder, cinnamon powder and mix well. Then add 4 cups of water and whisk well
Step 2 – Heat ghee in a kadhai and add cumin seeds, dry red chilli and curry leaves. Saute for 4-5 min
Step 3 – Add the mixture and cook till it thickens
Garnish with coriander leaves and serve hot.
Arbi ki Sabzi
Time to cook: 30 min
Serves: 2-3
Ingredients:
250 gm arbi (peeled and chopped)
1/4 cup curd
1/2 tablespoon Ajwain
1 tablespoon ginger (shredded)
Chilli powder
Rock Salt
1 tablespoon ghee
Rock salt
Method:
Step 1 – Heat ghee in a kadhai and add ajwain
Step 2 – Add yoghurt and heat till ghee is separated from it
Step 3 – Add salt and chilli powder
Step 4 – Add arbi and after it cooks well add 2 cups of water and bring to boil
Step 5 – Cover the kadhai and cook on simmer for 7-8 min
Serve hot.
Sabudana Kheer
Time to cook: 25 min
Serves: 4
Ingredients:
1 cup Sabudana (soaked for 4 hrs)
3 cups milk
Khoya 1/2 cup
ghee 1 tablespoon
Almonds chopped 7-8
Sugar 1/2 cup
Cashewnut 7-8
Raisin 8-10
Cardamom powder 1/2 tablespoon
Method:
Step 1 – Heat 4 cups of water in non-stick pan, add Sabu dana and cook well
Step 2 – Add milk and khoya and cook for 4-5 min
Step 3 – Meanwhile, saute almonds and cashew nuts in a separate pan
Step 4 – Add sugar in Sabudana
Step 5 – Add sauteed nuts and raisins to the Sabu dana kheer
Step 6 – Add cardamom powder and cook for 3-4 min
Garnish with roasted almonds and serve hot.
Sabudana Vada
Time to cook: 30 min
Serves: 4
Ingredients:
Sabudana 1 1/2 cups (soaked for 2 hours)
3 potato (boiled and mashed)
Roasted peanuts 1 cup
3 green chilli chopped
Lemon juice
salt to taste
oil
coriander leaves chopped
Method:
Step 1 – Mix Sabu dana, potatoes, peanuts, green chillis, coriander leaves, lemon juice and salt; make small vaddas of equal
size
Step 2 – Take oil in kadhai and deep fry the vaddas
Step 3 – RemoveTake excess oil from vaddas with a tissue
Serve hot with green chutney.
